From Edinburgh to Arizona: How One Opportunity Changed Everything
Hi! I’m Nooriya Ali, an Architecture and Interior Design student at Edinburgh Napier University, and if there’s one thing I’ve learned so far, it’s that life can take you places you never planned — but exactly where you’re meant to be.
Beginnings That Don’t Look Like Beginnings
I still remember the moment I opened that email about the Saltire Scholar Programme. I had no idea that small click would open a door that would shape my career, confidence, and outlook on life.
At that time, I was focused on finding a role that could help me grow in Scotland — something I thought would perfectly fit my path. So when I faced a rejection for what felt like “the one,” I was honestly gutted. But life has a funny way of redirecting you. Soon after, I received news that changed everything:
I’d been offered an internship in the United States — Arizona, Phoenix 🇺🇸
I’d never been to America before, and truthfully, I didn’t even imagine it as a realistic option. The difference between the UK and the US felt like night and day — culturally, environmentally, and professionally. When I first applied, I didn’t overthink it. When I got the interview, I stayed calm. When I got the job… I didn’t believe it. Out of hundreds of applicants, it was me.
Maybe it was imposter syndrome, but it only really sank in during the Saltire celebration event in May, where we gathered to acknowledge all our hard work. The room felt electric, every person there working towards a brighter future, not just for themselves, but for Scotland.
That day, I’d make this opportunity count — to give it everything I had and leave with more than I came with. Because every great leader is a dreamer — and every dreamer starts with a single, brave step.
When I first arrived in Arizona, I was in awe. It’s a state full of contrast and wonder, known as cowboy country, with endless open skies, sun-baked deserts, and landscapes that felt straight out of a movie. What amazed me most was how different it was from what I was used to; instead of rows of trees, I was surrounded by hordes of cactuses, the kind I’d only ever seen in cartoons.
Every drive felt like a scene from an adventure film - golden sunsets, red rocks, and desert winds that made every evening feel like a story waiting to be told. It was a beauty unlike anything I’d known in Scotland — a reminder that sometimes, the places that feel furthest from home are the ones that open your eyes the most.
I’ve always believed you can engineer your life to have more happiness. If there’s something you truly want, you will achieve it. You don’t need to be the smartest person in the room, or have perfect grades — trust me, I don’t. What you do need is consistency, curiosity, and the courage to keep going when things don’t go to plan.
Every step you take, even the uncertain ones, leads you somewhere. Even if a job or internship doesn’t work out exactly as expected, what you learn along the way always moves you closer to where you’re meant to be.
My Internship at Sprouts Farmers Market
That step led me to Sprouts Farmers Market, where I worked as a Culinary and Product Development Intern - a role completely outside my field, yet one that turned out to be life-changing.
I’ve always loved food, but this internship gave me the chance to see how passion meets process in a corporate setting. I joined the Culinary Innovation Team, working alongside brilliant people who cared deeply about quality, creativity, and customer experience.
Every day was something new — from testing cookies and developing bread guides to working with vendors, sampling sausages, and even washing mac & cheese to count the pasta-to-sauce ratio (yes, really — all in the name of precision!).
I saw firsthand how much care goes into every detail — from sourcing products responsibly to setting gold standards for what ends up on the shelves. My main project? Creating a new parfait recipe for 2026. A task I handed over to my amazing manager when I left, but one that taught me how exciting it is to design for real-world impact.
What I loved most was the energy — the joy of going to work, collaborating with a team that believed in innovation, and being part of a process that always asked: “How can we make this better for people?”
Some of my favourite memories from the internship were with the Culinary Team — the heart of every day at Sprouts. We laughed, shared stories, and bonded over our unique personalities, turning busy workdays into moments of genuine joy. It was such a pleasure getting to know them — not just as colleagues, but as people who brought so much energy, creativity, and kindness to the workspace. Being part of that team reminded me how powerful it is to work alongside people who truly love what they do.
A Summer of Adventure
Outside of work, I explored everywhere I could — Universal Studios in LA, the Grand Canyon, Zion National Park, Mount Lemmon, Sedona, and so many local gems across Arizona, Utah, and Nevada. I hiked incredible trails, had my first taco, and shopped at Target (which honestly deserves the hype).
More importantly, I built friendships that I’ll carry with me. People who believed in my potential and reminded me that I could make an even bigger difference if I ever came back to the US.
For the future of the next saltire applicants - don’t let fear or self-doubt hold you back. Apply for the opportunities, even the ones that feel out of reach. If you believe you’re meant to grow, to explore, to contribute - you will.
You don’t need perfect grades or a flawless plan. You need belief, resilience, and a willingness to take that first step. Because every beginning, no matter how small or uncertain - leads to growth. And growth, one day, becomes purpose.
